Creamy Four Cheese Macaroni

1/3 cup all purpose flour

3 T. butter

2-2/3 cups milk

3/4 cup shredded

Fontina or Swiss cheese

1/2 cup grated Asiago cheese

1/2 cup shredded sharp Cheddar

3 ounces Jack cheese, cubed

2 cups elbo macaroni

1/2 t. salt

Cooking spray

1/3 cup melba toasts, crushed

1 T. butter, softened

Preheat oven to 350'

Bring 4 quarts of water to boil, add salt and macaroni.

Cook until tender but firm, 8-10 minutes. Drain in colander.

Melt butter over medium heat in saucepan, stir in flour.

Cook and stir for three minutes, add milk and stir until thick.

Add cheeses; cook and stir constantly until cheese melts.

Stir in cooked macaroni, add salt and white pepper to taste.

Spray 2 quart casserole . Pour mixture in and sprinkle top with

crumbs mixed with butter. Bake at 350' for 30 minutes or until

bubbly.

Serves 8. Enjoy!

Creamed Spinach

2 pounds fresh spinach

4 T butter

1 small onion, minced

1 T. flour

2 drops Almond extract

Salt and Pepper

1 cup pureed green peas

1 cup heavy cream

Toasted bread triangles

Wash the spinach thoroughly. Steam it in it's on moisture until it wilts. Press out water and chop coarsely. Melt butter, sauté onion. Add flour and cook for three minutes. Add the spinach, peas and cream. Bring to a simmer, stirring. Add Almond extract and correct seasoning. Serve with toast triangles. Enjoy!

Milk and Egg Sweet Custard

1 quart whole milk

2 t. pure vanilla

1/2 cup honey plus 2 T. sugar

1/4 t. salt

4 whole eggs

2 egg yolks

1/2 t. lemon zest

Scald the milk with the vanilla, honey, sugar and salt: then cool. Beat eggs and egg yolks together. Beat until smooth. Add lemon zest. Pour into 6 to 8 individual ramekins.

Bake in a baine marie*, in preheated 350' oven for 45 minutes or until a knife comes out clean. Chill if you can wait! Yum!!!

* baking pan filled with hot water, 3/4 way up the ramekins.

Pain Perdue (Lost Bread)

4 eggs

1 cup milk

1/4 t. salt

1 T. each, honey, sugar

1 T. Sherry or Rum

1 baguette

1/2 cup butter

Slice baguette into 1-1/2 inch slices, on the diagonal.

(It is best to do this the day before so the bread will be dry, or use stale bread.) Arrange slices in a baking dish to fit. Mix together the first five ingredients, and pout over the bread. Cover and let soak over night in the frig.

To prepare; Melt butter slices, turning when golden.

Using a baking dish, spray with cooking spray. Bake in 350' oven for 20-25 minutes until puffed up. Serve immediately, with hot syrup or powdered sugar. 2 or 3 slices per serving.

Maple Pecan Bread Pudding

3-1/2 cups stale croissants, cut into cubes

2-1/2 milk

1/3 cup maple syrup

2 T. sugar

1 t. vanilla

1/2 t. cinnamon

1/4 t. salt

1/4 t. ground nutmeg

3 eggs

1/3 currants, or raisins

Arrange croissants on baking pan in single layer and bake in 325' oven for 10 minutes. Then place in a sprayed baking dish.

Combine milk and next 8 ingredients in a medium bowl and whisk until well blended. Stir in currants and pour over bread. Toss gently to coat. Let stand for at least an hour. Bake for 1 hour in 350' oven or until pudding is set. Serve warm with a dollop of whipped cream! I'm ready!!!
